There was a bunch of mint in our CSA last week so we tried making Mint Chocolate Chip Ice Cream. First, we washed and cut up the mint leaves then steeped them in heavy cream to infuse the mint flavor.
Then strained the mint out and gradually mixed the cream with egg yolks and sugar and heated to thicken.
After it cooled it went into the ice cream machine.
Once it was thicker we added chopped bittersweet chocolate.
And let it continue to churn until it was the correct consistency.
Very strong mint flavor, very creamy, very fresh tasting and very good!
